Weekend Cooking

Cooked Warm Grilled Aubergine, Tomato & Buffalo Mozzarella Salad from the May 2009 edition of Delicious Magazine for supper after Louis was enrolled at Beavers (I only realised after preparing it that it was meant as a "starter") - absolutely delicious, could have eaten it twice over: aubergine grilled whole until it bursts, peeled and chopped - mixed with grilled tomatoes, mozzarella, fresh basil, and tossed with a chilli, garlic, red wine vinegar and olive oil dressing.
