Weekend Cooking

On Sunday I cooked the Boys their favourite cookie recipe (well, when I say favourite - it's the only cookie recipe I've cooked !). It's taken from a nifty little book that was a freebie with the BBC Good Food Magazine April 2006. It's called 52 Cakes, Bakes and Chocolate. Here's the recipe:

Smarties Cookies

Ingredients:

100g/4oz butter, softened (I usually use unsalted)
100g/4oz light muscovado sugar
1 tbsp golden syrup
150g/6oz self-raising flour
85g/ 3oz smarties (I use two tubes from the multipack)

Method:

- Preheat oven to 180C/Gas 4
- Beat the butter & sugar together in a bowl until light & creamy, then beat in the syrup
- Work in half the flour. Stir in the remaining flour with the Smarties & work the dough together with your fingers (I keep the Smarties in the 'fridge until needed)
- Divide into 16 balls. Place them well apart on baking sheets to allow for them spreading. Squash slightly (I usually make 12)
- Bake for 12-15 minutes until pale golden at the edges


For dinner I cooked Spicy Lentil & Bacon Soup from March 2009 edition of Delicious Magazine. What a tasty soup ! It's flavoured with leeks, chilli, coconut milk and lime - I've popped half in the freezer for later in the week. Forget serving it with coriander, break out the tortillas ! (I guess you could add a dolop of sour cream at the end to cool it a little too).
